As impressive as it is to cook a five-course gourmet meal, more times than not, all retirement-age people want is a tasty, easy meal for one. If you want to make it in a hurry, and all you’re looking for is a single serving dish, we have a number of recipes for the elderly. They are jam-packed with ingredients that are tasty and nutritious, come in smaller portions, and are quickly made.
Granted, one of the recipes below serves far more than one person. But it can be divided up and portioned out into single-serve, reusable, resealable containers for the freezer. Now you’re all set for other several meals, or even to have an impromptu guest join you. If you must, you can substitute tofu in most recipes where meat is called for.
Get ready, get set – create!
Note: Some of the following ingredients are optional, depending on taste. You’re going to need some olive oil, ground turkey, chopped onions, water, canned mushrooms, canned kidney beans, garlic, chili powder, paprika, oregano, ground cumin, ground cayenne pepper, and of course – salt and pepper.

Single Serving Portobello Pizza
Rather than a traditional pizza crust, this recipe uses a Portobello mushroom! You can either use spaghetti sauce or pesto sauce and then do some pizza toppings experiments. The total time for this recipe is about 40 minutes with 25 of it for cooking. It yields one serving only. You’re going to need some type of sauce, just referenced, a large Portobello mushroom, black olives, mozzarella cheese, chopped garlic, and pepperoni. Click Portobello Pizza here for the recipe.
