With more than seven years of experience in Senior Living Care, Darrel Waltner is originally from Philadelphia, PA. He has experience in Sales, Property Management and Executive leadership, as well as having taken up a previous position of Regional Director of Operationsand Sales.

Adriana Romero

Director of Celebrations

As the youngest daughter of a Mexican Navy officer, Adriana Romero has travelled the world and graduated from Lomonosov University in Moscow, Russia. This creative and dedicated leader is fluent in 5 languages: Spanish, Italian, French, Russian and English.Adriana has been with Conservatory At Champion Forest as the Director of Celebrations for several years. She is passionate about creating unique programs that inspires residents and guests to live a more independent and well-rounded lifestyle. To this end, her programs focus on all aspects of physical and mental wellness as well as social interaction. Some of the most memorable events Adriana has hosted include, casino outings, day trips,dinners and dances and even resident weddings. Adriana’s zest for life is a reminder to everyone that it’s never too late, and you’re never too old, to fall in love.

Miracle Bey

Executive Chef

Miracle Bey obtained her Culinary Degree at Chef John Folse Culinary Institute at Nicholls State University. She started her career at Ruffino’s Italian, Steak and Seafood Restaurant. She also spent time cooking at 18 Steak in the L’Auberge Casino and Hotel, and The Little Village, a fine dining Italian restaurant. Originally from Baton Rouge, Louisiana she moved to Houston, Texas, and joined Discovery Senior Living.

Miracle started working at Discovery as a Sous Chef and her stellar performance earned her great praise from the residents and families she served and in just a few months, allowing her the opportunity to accept a promotion to Executive Chef. Her accolades include an invitation to cook at the Master’s Golf Tournament at Augusta National in Augusta, Georgia three years in a row and she started her own catering company in 2017. Miracle strives for a five-star dining experience, which many have found the pleasure of enjoying.


Jeanine McKeithen

Senior Lifestyle Counselor

Senior Lifestyle Counselor Jeanine McKeithen brings more than 16 years of diverse senior living industry experience to her role at Conservatory At Champion Forest. A proud graduate of Lindenwood University in Saint Louis, MO, she has served upscale residential communities in both the Saint Louis and Houston areas, managing catering and special events, bar and food service operations and more recently working with seniors and families to customize lifestyle and care solutions that fit their unique needs. Outside of work, Jeanine enjoys being active and social, and spending time with close friends and family.  

Laura Calhoun

Senior Lifestyle Counselor

Senior Lifestyle Counselor, Laura Calhoun is a native to the Northwest Houston area and is a graduate of The University of Houston. Laura gained experience in the residential construction industry early in her career which has been very valuable through many facets of her decade-long tenure in the senior living industry. Laura is happily married to her husband Tom, a Navy Veteran and has four beautiful adult children. Laura enjoys visiting assisted living communities with her standard poodle mix, Bentley, travelling, riding horses and spending time with her family. Laura is passionate about the senior living industry and is committed to serving seniors through compassion and respect. Her mission is to work with seniors and their families who are searching for a new place to call home!
