Executive Director

Darrel Waltner has over seven years of experience in Senior Living Care ranging from Property Management, Sales, and Executive leadership, to Regional Director of Operations, and Sales. Waltner is originally from Philadelphia, PA., raising four children. “I am very excited to be a part of the Discovery Senior Living team, the community of Spring, Texas, and of course the team, and residents at Champion Forest. I look forward to having an opportunity to learn more about the residents, their families, and the team that serve them.”

Adriana Romero

Director of Celebrations

Adriana Romero is an educated, creative, and passionate leader in senior living programming and event management. Originally from Mexico, Adriana has traveled the world as the youngest daughter of an officer in the Mexican Navy. She studied and graduated from Lomonosov University in Moscow, Russia, and is fluent in 5 different languages – Spanish, Italian, French, English, and Russian. She has been with Conservatory At Champion Forest as the Director of Celebrations for several years. Her goal is to create unique programming that inspires the residents and guests to live a more independent lifestyle, through healthy wholistic programming which includes spiritual, intellectual, and physical wellness and social interaction. Some of the most memorable events she has hosted have included day trips to Galveston Island, casino outings, water aerobics, dinner dances, and even resident weddings. Adriana’s diverse pallet of programming reminds all that it’s never too late, and you’re never too old, to fall in love with something or someone.

Miracle Bey

Executive Chef

Miracle Bey obtained her Culinary Degree at Chef John Folse Culinary Institute at Nicholls State University. She started her career at Ruffino’s Italian, Steak and Seafood Restaurant. She also spent time cooking at 18 Steak in the L’Auberge Casino and Hotel, and The Little Village, a fine dining Italian restaurant. Originally from Baton Rouge, Louisiana she moved to Houston, Texas, and joined Discovery Senior Living.

Miracle started working at Discovery as a Sous Chef and her stellar performance earned her great praise from the residents and families she served and in just a few months, allowing her the opportunity to accept a promotion to Executive Chef. Her accolades include an invitation to cook at the Master’s Golf Tournament at Augusta National in Augusta, Georgia three years in a row and she started her own catering company in 2017. Miracle strives for a five-star dining experience, which many have found the pleasure of enjoying.
